As a part of my fruit-fest, I decided to make another recipe for Blueberry Pancakes (one from the Joy of Baking website). These were really, really quick and easy to whip together. I think the recipe was supposed to make 8, but I ended up making 7. The only change I made was to use oil in place of melted butter. Butter’s just too rich a flavor for me, and I don’t want it in my pancakes.
I’ve said it before, but now these are the most beautiful pancakes I’ve ever made. [My electric griddle (affiliate link) helps cook them evenly, which helps.] These were thick and fluffy pancakes. I thought the taste and the texture were fantastic. They would have been great without the blueberries, too.
I think my search for the perfect pancake recipe may be over. I really enjoyed these when I made them with cooking oil. I’ll still make other pancake recipes this year, but I don’t expect them to live up to this one.
