Since I needed to refresh my sourdough starter but it was too hot to bake, I decided to try out sourdough pancakes. I knew I’d seen a recipe before, and there are lots! I settled on making Blueberry Sourdough Pancakes.
The recipe has instructions on beginning a sourdough starter, but I used my own. I halved this recipe because I hadn’t made very much starter (no sense in wasting flour). I used oil in place of the melted butter, and I didn’t measure the blueberries. I think I probably used more blueberries than the recipe called for – because blueberries are delicious!
This recipe actually made the number of pancakes it said it would. Half a batch made 8.
The pancakes had a nice flavor. I could taste the vanilla in them. The texture was a little spongier than I expected, rather than just fluffy. Could I taste the sourdough? I’m not really sure. Would I want to just taste sourdough in my pancakes? Probably not. I do think it lent the pancakes a nice background flavor.
It’s nice to find another pancake recipe that I would make again, even if it’s not going to be my favorite one. If you’ve got some sourdough starter to use but you don’t want to heat up your oven, give these pancakes a try.

They look delicious! I think that the reason why you could not taste the sourdough flavor was because of the baking soda, which counterbalanced the sourness of the sourdough... just a guess 😉
