I’m not really a fan of pumpkin, but I like cooking with it. That’s why I decided that I wanted to try out Spiced Pumpkin Biscuits.
They were really pretty easy to make. I didn’t have pumpkin pie spice so I used a combination of (mainly) cinnamon, cloves, nutmeg, and ginger. I used margarine in place of butter. Otherwise, I had made no substitutions. The dough came together as described in the instructions. I gently kneaded the dough together, patted it out, and folded it over itself several times to make layers. I used a small glass to cut out 2-inch biscuits, and patted out the scraps again to cut out more biscuits, until I had 14 biscuits. I baked them exactly 14 minutes, until they were pretty and golden.
These were pretty tasty. They were very tender and moist. I have trouble tasting pumpkin, but Alex said they tasted pumpkiny (but I liked them, so they were just the right amount of pumpkiny). The apple butter I made went with the biscuits very well. The biscuits were good the following day, too. They were a nice change from regular biscuits, and I’d make them again.
