I had turkey stock in my freezer that I really wanted to use up, so I decided to make Turkey Soup with Lemon and Rice on Sunday. Soup seemed like a good thing to eat after having two consecutive meals of fried food.
I didn't have enough turkey stock for the recipe, so I added some chicken bouillon and water to make up the difference. I added onion for the leeks, and had cooked some chicken earlier to add to it.
I enjoyed this, but I wonder if it's primarily because I was starved for vegetables. I didn't enjoy the leftovers as much. I do like the addition of the lemon juice to the chicken soup, and I also really enjoyed the zucchini in this. I think it needed more rice to be more satisfying - I had to eat it with leftover biscuits to feel full.
I think I can say that I liked it when I was in the mood for it, and was ambivalent when I wasn't. I'm not sure if I'll make this again, but it's possible that I'd give it another shot.
