My friend Emily thought of me when she saw the recipe for Hot Chocolate Popovers. I had complained before that I thought popovers were too eggy, and she thought that these might not be, since they're chocolate. I decided that I had to try the recipe right away. I'm glad I did.
I used my popover pan for these, but the original recipe was actually made in a muffin pan, so don't let not having a popover pan stand in your way. I actually made these a few weeks ago, but I hope that by posting them now, before a holiday weekend, you'll be able to enjoy them for a nice brunch as well.
The recipe was simple to make. Mix together wet ingredients (melted butter, eggs, milk, and vanilla extract) very well with a whisk. In a larger bowl, mix together sugar, cocoa powder, salt, and flour (and espresso powder (affiliate link), which I didn't use). Whisk wet ingredients into dry ingredients and mix until no lumps remain. Pour evenly into greased muffin or popover cups. Bake in 400F oven for 30 minutes.
Remove popovers from oven and set oven to broil. Adjust oven rack as well. Sprinkle chocolate chips in the center of each popover, pressing in if you have to. (My popovers were actually a little sunken in, so the chocolate chips just fell right in.) Press in one large marshmallow on top, or 3-4-5-6 mini-marshmallows, which is what I used. Return pan to the oven and broil about 1 minute, until marshmallows are roasted (or melty, however you like them). Let popovers cool a little before serving.
These were delicious. The popover was soft and chocolatey, and not at all eggy - or at least, chocolate covered up any egginess about it. That said, these shone because of the chocolate and marshmallows in the center. I enjoyed having melty chocolate chips or marshmallow in every bite. I'm very glad I used mini-marshmallows because they tore apart so easily, unlike normal marshmallows. They went great with coffee, although milk would also be nice with the chocolate popovers.
This recipe was incredibly easy and fast to get in the oven. The 30 minutes while they were in the oven was plenty of time to make coffee or clean up any kitchen mess you made. They look impressive, and they're sweet and delicious. They're a great breakfast for company (if they like sweets), or just for yourself. I'll definitely make these again and I hope you'll give them a try sometime, too.
