Last night I made Tilapia with Tomato Cream Sauce (since I don’t like cod). This is another of those recipes from Eating Well, but I thought that it might be tasty enough that it wouldn’t seem too fishy. I like tomato-based sauces, I generally like cream, and I like things that I can put together easily after work! I used dried thyme instead of fresh (I really need to invest in an herb garden), and a little frozen onion instead of a shallot, but otherwise I followed this recipe closely. We had it over a little rice, and with a slice of garlic bread on the side. (The lettuce I’d planned on having for salad just wasn’t worth having any more.)
This tasted better than it looks. This isn’t at the top of my list of recipes, but it was easy and tasty enough that I’ll probably make it again at some point. Let’s face it – I just don’t like this fish that much. I am looking forward to having the leftovers for lunch tomorrow, though, with some fresh bread.
