For another blueberry breakfast, I decided to make Blueberry Cake, from the Joy of Baking website. I love coffee cakes, so I was pretty excited about this.
I followed the instructions for this recipe pretty closely. The streusel topping came together very easily. I used butter in this recipe, rather than margarine as I am usually inclined to do. I ended up pressing the blueberries into the batter a little bit when I put them on top, which I shouldn’t have done. I think I baked this for the full 50 minutes, if not a little bit longer.
It looked kind of pretty, but I ended up being disappointed by my execution of this recipe. Patting the blueberries into the batter made the top layer of cake a little soggy. Also, butter is too rich a taste for me, and the butter came through in this cake. It’s a matter of personal preference, but I really wish that I had used margarine in this recipe instead.
This tasted good, but I didn’t really eat much of it because of the sogginess I caused and the buttery [to me] taste. I think I deserve to give it another try, though!
