I made Miso-Marinated Filet Mignon with Sugar Snap Noodle Salad. Of course, I made this with just some regular cuts of beef, since filet mignon is pretty expensive. The marinade was pretty easy to make. I already had some miso paste in the fridge, so I didn’t really need to buy anything extra to make this. I left out the mustard, but there were enough other flavors in the marinade that it didn’t hurt the recipe at all.
The noodle salad was also pretty easy to put together. I was able to make it while the beef marinated. I used ½ teaspoon red pepper flakes in this rather than chile paste. I had frozen all of the snap peas that I had from my garden, so I tossed them all in.
This was tasty enough. The marinade gave a nice Asian flavor to the beef, but I think I enjoyed the noodle salad more. It was cool and refreshing with a nice hint of heat from the ginger and chili flakes. I don’t think I’d make this again, but it was good enough to try once.
