Another recipe I found on the Joy of Baking website was Butter Tart Squares. They looked relatively simple, and wouldn’t make way too much for me and Alex to eat. Plus, they sounded delicious.
The bottom layer is a shortbread crust. You bake this for about 20-25 minutes. It’s topped with nuts (I used walnuts and pecans – you can also use raisins), and then covered with a butter-brown sugar batter. This batter also includes a little corn syrup, and thus reminded me a little bit of a pecan pie filling. This goes back in the oven to bake for another 20-25 minutes.
I was using a different 8×8 pan than I usually do, so I had to bake the crust an extra couple of minutes to get it to be golden brown. The filling is also supposed to bake until set, which also took longer, 34 minutes total. I waited until it was no longer puffed up, and the squares were definitely dark brown.

These were delicious. I really enjoyed eating these. They were a little sticky and messy to handle, but definitely worth it. It was a little like pecan pie on a shortbread – much better than regular pecan pie since you can have a little at a time. I really liked these, and highly recommend them if you like rich, chewy bar cookies. I know I’ll make these again.
