Whisk together egg, milk, and oil. Add dry ingredients except for oats and whisk until just combined. Stir in oats. Let rest for 5 minutes while you heat the griddle.
Pour ¼ cup batter onto a hot, greased griddle (if it's not non-stick). Cook for about 2 minutes, until the tops are covered with bubbles and the edges look cooked. Flip and cook for another minute.
