Alton Brown Asian Slaw

  • 1 head cabbage
  • 1 yellow pepper
  • 1 red pepper
  • 3 green onions
  • 2 jalapenos seeded
  • 1 carrot
  • 2 tablespoons cilantro
  • 2 tablespoons mint optional, if you have it
  • 1 3- inch piece of ginger
  • 1/2 cup rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons sesame oil
  • 1/2 cup peanut butter
  • 1/2 teaspoon black pepper
  1. Using a shredder disc or a slicer disc (which I used for the picture), cut up a head of cabbage, 1 red pepper, and 1 yellow pepper. Place vegetables in a bowl. Replace the shredder disc with a chopping blade, and chop the green onions, jalapeno, ginger, carrot, cilantro, and mint. Add the rice vinegar, soy sauce, lime juice, sesame oil, peanut butter, and black pepper, and pulse to combine. Pour the dressing over the shredded vegetables and toss well to combine.
