Using a shredder disc or a slicer disc (which I used for the picture), cut up a head of cabbage, 1 red pepper, and 1 yellow pepper. Place vegetables in a bowl. Replace the shredder disc with a chopping blade, and chop the green onions, jalapeno, ginger, carrot, cilantro, and mint. Add the rice vinegar, soy sauce, lime juice, sesame oil, peanut butter, and black pepper, and pulse to combine. Pour the dressing over the shredded vegetables and toss well to combine.
