A week ago Friday I just happened across the Brown Sugar Oatmeal Pancakes recipe. [Edit: I can no longer access that link, but this should be the same recipe if memory serves me right.] I hadn’t even planned to make breakfast, but I decided I wanted to make pancakes when I woke up last Saturday morning. This recipe seemed like it would be quick and easy enough to have breakfast ready quickly. I got 9 pancakes out of the batter.
I’ve said this about several of the pancake recipes I’ve made, but I think that these are now the prettiest pancakes I’ve ever made. I think the pancakes took about 15 minutes to make, from pulling out the ingredients for the batter to getting them all on the table.
These cooked up really well. I don’t like my pancakes very sweet, and I think they had just the right about of sugar in them, particularly if you eat a little fruit on the side. The oats gave a nice texture to the pancakes, but didn’t really get in the way – I think an unobservant pancake eater wouldn’t even notice them. These were very simple to make, but having the brown sugar and oats makes them a nice departure from plain ol’ pancakes. I’d definitely make these again.
- 1 egg
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 cup flour (can use up to 1/3 cup whole wheat)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/2 cup old fashioned or quick oats
Whisk together egg, milk, and oil. Add dry ingredients except for oats and whisk until just combined. Stir in oats. Let rest for 5 minutes while you heat the griddle.
Pour 1/4 cup batter onto a hot, greased griddle (if it's not non-stick). Cook for about 2 minutes, until the tops are covered with bubbles and the edges look cooked. Flip and cook for another minute.
